In my honest opinion, probably one of the best cured meat treats I've experienced in my life. Yes, that's a bold statement, but I'm also wearing a brightly coloured turquoise shirt whilst writing this. The name was chosen in homage of the main ingredient in making salumi and cured meats - Salt. It's the purest form of preservation throughout history. A magical substance that can make a dish wonderful and bring out every nuance and flavour, and at that very same moment, give you hypertension. You thought I was going to say ruin the dish by being overly salty didn't you. Nope. Too much salt is always a "good thing" to quote Martha Stewart.

Combine that with a trendy, skinny jean, long haired cool dude or dudette with a knowledge of their wares beyond that of Albert Einstein and E=MC squared, and you've got an amazing experience, something unlike that of Savasana in a hammock.
